Calcium Alginate is a natural polymer derived from brown seaweed. It is a water-insoluble, gelatinous, cream-colored substance that can be created by combining sodium alginate with calcium chloride, creating a gelled substance that is able to hold its shape and act as a bioactive material.
Alginate is the term usually used for the salts of alginic acid, but it can also refer to all the derivatives of alginic acid and alginic acid itself; in some publications the term "algin" is used instead of alginate. Alginate is present in the cell walls of brown algae as the calcium, magnesium and sodium salts of alginic acid.
Calcium Alginate is a popular food ingredient. It is a frequently used as a thickener, stabilizer, emulsifier and a gelling agent to improve texture and consistency, prevent syneresis, and increase stability during processing and storage. The most frequent uses are in cheese, ice cream, salad dressings, and in health products, adding artificial flavors and colors creates a tastier edible slime. Moreover, it acts as a non-toxic and biodegradable alternative to synthetic stabilizers used in many processed foods. It shares a lot of properties with Sodium Alginate.
Calcium Alginate is also widely used in Pharmaceuticals in dressings, textile industry, and in chemical industry.
