Acesulfame-K is a high-intensity, non-nutritive sweetener that has been used in the food and beverage industry. It is commonly referred to as acesulfame potassium, and it's a calorie-free ingredient that can be used as a sugar substitute.
Acesulfame-K is soluble in water and slightly soluble in alcohol. It has good stability under heat (stable up to 225°C), acids and light. It is stable under a wide range of pH (2 to 10), and do not react with other ingredients or additives.
One of the primary benefits of Acesulfame-K is its sweetness intensity. It can be up to 200 times sweeter than sugar, about two-thirds as sweet as Saccharin, and one-third as sweet as Sucralose, meaning that a very small amount can be used to create the desired level of sweetness. This makes it an ideal sugar alternative for those who have dietary restrictions or are looking for a lower calorie option.
Acesulfame-K is often blended with Sucralose or Aspartame. These blends are reputed to give a more sucrose-like taste whereby each sweetener masks the other's aftertaste or exhibits a synergistic effect by which the blend is sweeter than its components. Acesulfame-K has a smaller particle size than Sucrose, allowing for its mixtures with other sweeteners to be more uniform.
Unlike Aspartame, Acesulfame-K is stable under heat, even under moderately acidic or basic conditions, allowing it to be used as a food additive in baking, or in products that require a long shelf life. In carbonated drinks, it is almost always used in conjunction with another sweetener, such as Sucralose or Aspartame.
Acesulfame-K is also used as a sweetener in protein shakes and pharmaceutical products, especially chewable and liquid medications, where it can make the active ingredients more palatable.
