Sorbitan Tristearate, also known as STS, is a versatile and widely-used chemical compound in the food and cosmetic industries. This additive is commonly used as an emulsifier, stabilizer, and thickening agent due to its unique properties.
Sorbitan Tristearate is soluble in polarity organic solvents, and insoluble in water with the HLB value is 2.1.
Its main functions are to retard fat bloom in chocolates and prevent cloudy appearance in cooking oils
Sorbitan esters are lipophilic and nonionic surfactants. They are safe and nontoxic as emulsifier. Depending on the types of fatty acids, different types of sorbian esters can be synthesized.
