Sorbitol is referred to as a nutritive sweetener because it provides dietary energy: 2.6 kilocalories (11 kilojoules) per gram versus the average 4 kilocalories (17 kilojoules) for carbohydrates. Application:
1. In Food Industry:
- Sweetener: Sorbitol is widely used as a sweetener in many kinds of food & diet food, including sugar-free candies, gums, frozen desserts, bakery products …etc.
- Sorbitol has moisture and stability, hence it can be added to candies, bakery products and chocolate to avoid the food getting dry and breaking.
2. In Pharmaceutical Industry:
- Cough syrups, mints & diet-free gums.
- Sorbitol is used in bacterial culture media to distinguish the pathogenic Escherichia coli O157:H7 from most other strains of E. coli, as it is usually incapable of fermenting sorbitol, but 93% of known E. coli strains are capable of doing so.
3. In Cosmetics Industry:
Sorbitol is used as a humectant and thickener. Also used in mouthwash and toothpaste.
